Day 1 Snack: Yogurt with Bilberry Powder and Berries

Ingredients:
  • 6 oz. Low fat Plain or Vanilla Yogurt 
  • 1 Tablespoon Nordic Nordic Bilberry Powder
  • 2 Tablespoons Mixed Berries (I love Blackberries and Pomegranate Seeds)

Direction:

Mix powdered Bilberry with yogurt, top with berries. DEVOUR

Breakfast - Veggie Quiche Cups (Makes 6 servings = 2 muffin quiches)

I use all Organic, non-GMO ingredients. If I can't find organic/non-gmo, I substitute with ingredients that are.

  • 3 Large Eggs
  • 1/2 Cup Cottage Cheese (1 - 2 % Fat)
  • 1/4 Cup Reduced-Fat Feta Cheese
  • 1 Cup Fresh Chopped Spinach
  • 1/4 Cup Chopped Red Bell Pepper
  • 1/4 Cup Chopped Onion
  • 3 - 4 drops Hot Sauce (optional)
  • 1 Garlic Clove, minced
  • 1 Pinch Salt
  • 1 Pinch Fresh Ground Pepper

Directions:
  1. Line a muffin pan with foil baking cups. Spray the cups with cooking spray.
  2. Whisk eggs, and mix with cottage cheese, feta, spinach, bell peppers, chopped onion, hot pepper sauce, garlic, salt and pepper. Mix well.
  3. Pour evenly into 12 muffin cups. Bake 350°F for 20 minutes or until knife inserted into the center comes out clean.

Tips: I do not use a microwave for re-heating. These can be eaten cold, or reheated in the oven at 275°F for 5 to 6 minutes. Also, note that any combination of veggies may be used!
